Needed Items

Mixing Bowl

Wisk or electric mixer

Spatula

Baking dish

Sieve or flour sifter

Ingredients

2 cups of flour (sifted)

2 cups of shredded pumpkin

2 eggs

1 cup of sugar (hemp cannabis sugar)

3/4 cup melted butter (hemp cannabis butter)

2 tsp cinnamon

2 tsp pumpkin spice emulsion

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 tsp Vanilla

1/2 - 1 tsp all spice

Instructions

Preheat oven to 350°F.

In a mixing bowl cream together butter, sugar, and eggs. Mix in baking powder, baking soda, salt, and seasoning. Fold in shredded pumpkin. Gradually stir in sifted flour until fully incorporated.

Transfer to a loaf, cake or pie dish and bake at 350°F for 50-60 minutes. If using a standard muffin tin reduce cooking time in half. Baking is completed when an inserted toothpick is clean when removed.

Cool and enjoy.

Notes and Alterations

For infusion you need to substitute hemp cannabis oil, hemp cannabis butter, or hemp cannabis sugar for a portion or the entirety of the measurement. Don't have your own made? Try our sublingual oils.

Don't have shredded pumpkin? Use a can of pumpkin, or 1 1/2 cups pureed pumpkin instead.

No butter? Use oil instead. A mild flavor is best, but feel free to use your favorite. You can reduce oil to 1/2 cup in most instances.

Pumpkin emulsion, what? Use pumpkin spice seasoning instead.

No all spice? Substitute clove, or omit.

Sweetener? I like half raw sugar and half packed brown sugar for depth of flavor, or raw sugar with a splash of pure maple syrup. You can use plain white sugar, or your favorite sugar substitute. If you like it sweeter you can add an extra 1/2-1 cup of sugar.

Mix-ins: Add 1 cup of chopped nuts, chocolate chips, or a combination.

Toppings: This recipe is great for adding icing, whipped cream, or frosting without being overly sweet. Cream cheese frosting is a favorite of mine, but vanilla, pumpkin spice, and cinnamon are nice. Sliced and toasted with melted butter and/or a drizzle of honey or maple syrup is tasty as well.

Other alterations? These are the only substitutions that I make depending on cravings and available ingredients. Make sure to comment your favorites so I can try them!
